Member Alastair Philip Wiper has been commissioned by Wired UK to capture the cheese-making process at the biggest dairy producer in Scandinavia, Arla Foods.
A cooporative owned by over 7,000 Danish and Swedish farmers, Arla Foods is one of the largest dairy companies in the world. Alastair was sent to Denmark by Wired UK to follow the manufacturing process of its various products.
His journey began in Eastern Denmark, at Peter Siversten's organic dairy farm. Peter is the fourth generation in his family to run the farm, which has 155 dairy cows producing 4,200 litres of milk a day. The farm uses automatic robot milkers, which electronically tag, weigh and milk each cow, which receives a treat in turn for its troubles.
The next stage in the process takes place at Taulov Dairy in Jutland, which uses 620,000 tonnes of milk to produce 60,000 tonnes of cheese each year.
